Black Bean Burgers

I’m forcing my family (& friends) to branch out and make something they may not have had before, so I recommended this dish. It’s so yummy, I could eat it again!

Black Bean Burgers (serves 4)

Ingredients:

  • 1 15-ounce can low-sodium black beans, drained
  • 1/2 cup dry breadcrumbs (I used Panko)
  • 1/3 cup finely chopped onion
  • 1/3 cup no-salt-added tomato sauce (I used Miz Sassy’s)
  • 1 tsp cumin
  • 2 tbsp chopped cilantro

Directions:

Preheat oven to 400 degrees, and coat a baking sheet with nonstick cooking spray. In a medium bowl, mash black beans with a fork or potato masher. Add breadcrumbs, onion, tomato sauce, cumin and cilantro. Blend with a fork. Form into 4 patties.

Bake for 15 minutes. Remove carefully with a spatula

I put mine on a Orowheat sandwich thin, and dressed with Miz Sassy’s, tomato, lettuce and onion. Feel free to dress with whatever you have!
