Awesome Spaghetti Squash Lunch

I made this for lunch Sunday, it was SO good! Spaghetti Squash is awesome because it’s a tasty winter squash that can be easily masqueraded as the carb-heavy counterpart. This recipe is super easy and can be a great first step to embracing and loving spaghetti squash.

Vegetable & Spaghetti Squash Starter (serves 2)

Ingredients:

  • 1/4 of a baked spaghetti squash
  • 2 small tomatoes (or 1 large)
  • 3-4 basil leaves
  • roasted vegetables (I used onions, carrots and eggplant)
  • 1 Tbsp Dijon mustard

Directions:

Prepare ingredients: chiffon the basil, cut up the tomatoes and vegetables. Incorporate all ingredients in a large saute pan. Mix until warm enough to be appetizing & enjoy!

by the way, it’s awesome with a small salad!
